All member Sous and Pastry Chefs are invited to compete. The field will be limited to the first 20 registrants (there is no fee to register).
Prizes will be awarded for 1st -3rd in both Savory and Pastry with full participation. 1st Place -$500, 2nd Place -$300 and 3rd Place - $200. Winners of the People’s Choice Awards will win $500!
The top three overall score winners of the Culinary Exchange will be invited to compete in the Clash of the Club Chefs at the CMMA’s Expo on March 16, 2020 where the winner will receive $1,000 and with second and third place contestants winning $500.
General Culinary Exchange Guidelines:
- Must be small portion, 3-4 bites
- Must have a center focus ingredient (Savory or Pastry)
- 7.25 inch square white plates will be provided and should be used for competitor’s plate presentation.
- Please include description of item.
Each Station will have 2 eight foot tables, one in front, and one in back. They will be skirted, but table décor is at the discretion of the competitor.
Competitor is responsible for menu presentation and decoration of their station. Each competitor is limited to two helpers during the event.
